ANALISIS HIGIENE SANITASI DAN KEBERADAAN Escherichia coli DI TEMPAT PEMBUATAN TAHU PUTIH KELURAHAN MAJASARI KECAMATAN PRABUMULIH SELATAN.
Tofu has a simple shape and has high nutritional value. In the process of making tofu there is a risk of contamination in the form of physical, chemical and biological so that it can cause health problems that affect human health. Escherichia coli bacteria are bacteria that are very close to the process of making tofu. This bacterium is one of the causes of diarrhea that is often found in society. Not only children, parents can also get this disease. The purpose of this study was to analyze sanitation hygiene and the presence of Escherichia coli in the white tofu production site, Majasari Village, South Prabumulih District. This research is a descriptive qualitative research, with a total of 7 informants in this study consisting of 1 white tofu business owner, 1 health worker in the sanitarian section of the Prabumulih Selatan Health Center, 3 handlers who make white tofu and 2 consumers who use it. in this research. Parameters observed were sanitary hygiene, place sanitation facilities, personal hygiene, tofu processing and white tofu packaging. The results showed that the white tofu production site including sanitation hygiene, sanitation facilities, personal hygiene, tofu processing, and white tofu packaging met the health requirements according to the Minister of Health of the Republic of Indonesia Number 1096 of 2011. The bacteriological test results did not find E. coli in the white tofu produced. It was concluded that the sanitation hygiene analysis and the test for the presence of Escherichia coli in the white tofu production site, Majasari Village, Prabumulih Selatan District, had produced well and met the RI Minister of Health standards No. 1096/Menkes/PER/VI/2011 for food sanitation.
