Tujuan penelitian ini adalah mempelajari karakteristik mi basah yang terbuat dari kombinasi penggunaan pati sagu sebagai bahan substitusi dari tepung terigu. Penelitian dilakukan di Laboratorium Kimia Hasil Pertanian, Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya Indralaya pada bulan April 2010 sampai dengan November 2010. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) non factorial dengan satu perlakuan dan tiga ulangan. Parameter yang diamati meliputi karakteristik fisik (warna dan tekstur), karakteristik kimia (kadar air, kadar abu, kadar protein, kadar amilosa), dan uji sensoris. Hasil penelitian menunjukkan bahwa perlakuan substitusi pati sagu berpengaruh terhadap tekstur, kadar abu, kadar protein, kadar amilosa, dan nilai lightness. Uji organoleptik, menunjukkan bahwa perlakuan A2 (pati sagu 20%) merupakan perlakuan terbaik dengan karakteristik tekstur 344,47 gf, kadar air 31,08%, kadar abu 0,24%, kadar protein 6,35% dan kadar amilosa 24,35%.
