KUALITAS FISIK DAGING KAMBING YANG DIMARINASI MENGGUNAKAN LARUTAN BELIMBING WULUH (Averrhoa bilimbi L)
Goat meat from old goat has a tough characteristic it needs to be treated to improve its physical quality. The purpose of this study to determine the effect of the use of belimbing wuluh as marination materials on the physical quality of goat meat. This research was conducted at Nutrition and Feed Farm Laboratory of Animal Science Department of Agriculture Faculty of Sriwijaya University from August to September 2017. The research design used was Completely Randomized Design (RAL) with 4 treatments and 3 replications, followed by Duncan Multiple Range Test. The treatment used was P0 (without marination process), P1 (marination using 30% wuluh starfruit solution), P2 (marination using 60% wuluh starfruit solution), P3 (marination using 90% wuluh starfruit solution). The observed variables include pH, water holding capacity, shrinkage, and tenderness.
