PENDUGAAN UMUR SIMPAN BUMBU KALDU BURGO INSTAN IKAN GABUS BUBUK (CHANNA STRIATA)DENGAN PENDEKATAN KADAR AIR KRITIS
Thisrresearch aims toeestimatetthesshelfllifeoofppowder snakehead fish (Channa striata) instant burgo broth were stored in polypropylene dan metalized plastic packaging with storage RH of 75%, 85% and 90%. It used theaASLT method through theCcriticalwwaterccontentaapproach. This research was conducted in a laboratory experiment basedOonTtheCcriticalWwaterCcontentAapproach, namely the isothermic sorptionccurve approach. The parameters were theddeterminationoof the intial moistureccontent (mi),,criticalwwaterccontent (mc), equilibriumwwater content (me) and isothermicSsorption curve, determination of the isothermic sorption model, determination ofsslope value (b), packaging surface area (A) and thewweightoofssolidspper package (Ws),tthe permeability oftthe package (k/x), saturated vapor pressure (Po) andtthe determinationoofsshelfllife (t).tTherresults showedtthe water content of burgo broth 6,85% (0,068 gH2O/gsolid) met the SNI 01-3709-1995. The powdered instant burgo stored at storage RH condition of 75%, 85% and 90%. The shelf life of powdered instant burgo seasoning packed using polyproylene plastic 0,8 mm is 300,133 days (10,004 month), 144,96 days(4,834 month) and 95,142 days (3,171 month). respectively. While the shelf life of powdered instant burgo seasoning packed using metalized is 1.286 days (42,87 month), 621,14 days (20,7 month) and 407,71 days (13,59 month). The result of this study were RH condition of 75% storage using metalized packaging is the best treatment fot storage of powdered instant burgo seasoning.
