ANALISIS HIGIENE SANITASI PENYELENGGARAAN MAKANAN DI INSTALASI GIZI RUMAH SAKIT KUSTA DR.RIVAI ABDULLAH MARIANA BANYUASIN 1 KABUPATEN BANYUASIN TAHUN 2020
Hygiene and sanitation are very important in determining the quality of food which if not considered will causefood borne disease. The purpose of this study is to analyze the sanitation hygiene of food administration and personal hygiene in the nutrition installation of the Leprosy Hospital dr. Rivai Abdullah Mariana Banyuasin Regency. This research is qualitative with an observational approach and laboratory tests. Determination of informants in this study use the purposive sampling method. The data analysis used in this research is content analysis with the validity method of triangulation. The results showed that the nutrition installation party obtained food ingredients from a third party with predetermined criteria, then the raw materials were stored in a separate room and had implemented a First in First Out system. The raw material processing room has been equipped with facilities such as exhaust fan, fat separator, and sink and is in a clean condition. Then the processed food is brought to a temporary storage room before being put into a serving plate, after being put into the serving area, the food is directly served to the patient using a trolley, either a regular trolley or one with a heater foof handlers continue to wear Personal Protective Equipment such as masks, aprons, and head coverings, as well as food handlers at nutrition installations are always subject to health checks every 6 months. The application of the principles of food and beverage sanitation hygiene, selection and personal hygiene of food safety has met the requirements in accordance with the Regulation of the Minister of Health of Republic Indonesia No.1096 of 2011 concerning Sanitation Hygiene for catering services and the regulation No.1204of 2004 concerning hospital environmental health requirements. Suggestions for research, the hospital should strive for the installation of nutrition at the Leprosy Hospital dr. Rivai Abdullah Mariana Banyuasin received training in food processing sanitation hygiene
