FORMULASI SNACKBAR BUJAKA (LABU KUNING (Cucurbita moschata), JAGUNG (Zea mays), DAN KACANG TANAH (Arachis hypogaea)) SEBAGAI PANGANAN LOKAL PENDUKUNG ASUPAN BALITA (36-59 BULAN) SAAT KONDISI DARURAT DI INDONESIA
The increasing incidence and victims of disasters every year certainly requires efforts to reduce the effect. Disasters that occur suddenly can cause a food crisis that will affect the nutritional status of refugees, especially for the group of toddlers aged 3-5 years. Therefore, additional food like a snackbar is needed. The purpose of this study was to make a snackbar formulation made from local ingredients such as corn, peanuts, and pumpkin as an emergency food product, determine the nutritional content and appropriate dosage for each formulation, and conduct hedonic and hedonic quality test on snackbar formulations. This experiment used experimental research using Completely Randomized Design (CRD) with 3 formulations. There were hedonic and hedonic quality test. Data analysis used a one-way ANOVA test with Duncan's follow-up test. The results of the study found that the F1 formula with a ratio 40:60 of corn and peanuts had 46,81% of carbohydrates, 12,27% of protein, 41,32% of fat and 417,75 Kal of energy. Formulation of F2 with ratio 50:50 of corn and peanuts had 43,53% of carbohydrates, 10,70% of protein, 46,64% of fat and 384,27 Kal of energy. Meanwhile, the F3 formula with a ratio 60:40 of corn and peanuts had 41,10% carbohydrates, 10.81% protein, 48,68% fat and 417,75 Kal of energy. Based on nutritional content test, hedonic test and quality hedonic test, this study found that the F2 formula was the chosen formulation.
