ANALISIS HIGIENE DAN SANITASI DI KANTIN KAMPUS UNIVERSITAS SRIWIJAYA INDRALAYA
The condition of a campus canteen reflects the health status of the academic community in it. The canteen must meet the hygiene, health and environmental requirements or often called hygiene and sanitation effectively. This study aims to determine hygiene and sanitation in the canteen at the Sriwijaya University Indralaya Campus. This research design is qualitative using descriptive method. The informants in this study were selected directly by the researcher (purposive sampling) which were divided into 2 criteria, namely 10 key informants and 10 regular informants. In this study sampling used the principle of suitability and adequacy. Data collection in this study was carried out by means of observation and interviews. Data collection tools use In-depth Interview Guidelines, Observation Sheet (checklist) and Documentation Tools. The results of this study are that most of the canteens have not met the sanitary hygiene requirements according to the Minister of Health of the Republic of Indonesia No. 1096 of 2011, both food handlers hygiene, building conditions, hand washing places, washing utensils, and trash cans. The conclusion of this study is that the hygiene of the canteen sanitation at Sriwijaya University Indralaya has not met the requirements, whether it is food handlers' hygiene, building conditions, hand washing facilities, washing utensils, and trash cans due to the lack of knowledge of canteen owners and food handlers about food and beverage. Therefore, efforts are needed to improve, supervise, counsel and train / courses for canteen owners and food handlers
