KINERJA INDUSTRI PENGOLHAN BAKSO DI KOTA PALEMBANG
This study aims to determine the performance of the meatball processing industry in terms of labor productivity, efficiency, profitability and value added in the city of Palembang. This research is a qualitative descriptive study, the data used is in this study the population of 22 meatball business units in Palembang City according to data on cooperatives in Palembang City. The results showed that the performance of the Meatball Processing Industry in Palembang City in terms of the level of labor productivity resulted from an average of 3.59, which means that the number of workers obtained is greater than the source of labor that uses the resulting efficiency level. 1.7 percent average, the level of profit generated an average of Rp. 931,132, which means that the greater the added value created and the smaller the income from the workforce, the higher the profits will be. The added value generated is an average of Rp. 1,206,833 due to the large number of meatball processing factors obtained, the greater the added value created from a product.
