PENENTUAN UMUR SIMPAN KEMPLANG IKAN ASAP CAIR MENGGUNAKAN METODE AKSELERASI DENGAN PENDEKATAN KADAR AIR KRITIS
This study aims to determine the self life of liquid smoke fish crackers were stored in polypropylene (PP) and metalized plastic packaging with RH of 75%. This research was conducted in a laboratory experiment based on the critical water content approach of isothermic sorption curve and was repeated 3 times. The parameters observed were initial water content (Mi), critical water content (Mc), sensory test, physical test (crispness), equilibrium moisture content (Me), isothermic sorption curve, determination of isothermic sorption model, determination of slope value (b) curve isothermic sorption, package permeability, packaging surface area, weight of solids per package, saturated vapor pressure and self life of this crackers. The results showed that the self life of liquid smoke snapper crackers stored in 0,8 mm polypropylene packaging is 109,54 days or 3,651 months and liquid smoke snapper crackers stored in metalized packaging resulted is 480,43 days or 16,014 months.
