KINETIKA PERUBAHAN KADAR AIR DAN ANALISIS EKONOMI KEMPLANG IKAN YANG DIMATANGKAN DENGAN MICROWAVE
The objectives in this research were to estimate the shelf life and economic analysis of microwavable fish crackers. The research was conducted from February to November 2020 at the Agricultural Product Chemistry Laboratory and Sensory Laboratory, Agriculture Technology Major, Faculty of Agriculture, Sriwijaya University, Indralaya. The sample of microwavable fish crackers were packed with three various methods which are polypropylene (PP), PP + silica gel, and nylon + vacuum. The samples were stored at room temperature (± 30 °C) for 30 days and analyzed in every 5 days of storaged. There were two methods used in this study. Estimation of shelf life was done by calculating the parameters of degradation of microwavable fish crackers with the reaction kinetics equation and processed using the Arrhenius equation, the quality parameter was moisture content. Economic analysis were conducted by calculating financial feasibility used BEP (Break Even Point), NPV (Net Percent Value), Net B/C (Net Benefit/Cost), IRR (Internal Rate Return), and PP (Payback period). The results showed that the kinetic changes in the moisture content of microwavable fish crackers packaged in three packaging methods followed by reaction order 1 and reaction order 2. The shelf life of microwavable fish crackers packaged in PP 27was days, PP+silica gel packs was 29 days, and nylon+vacuum packs 31 was days. Cost analysis in the microwavable fish crackers business resulted an investment cost was Rp. 94,400,000, BEP value of production volume was 18,313 packs/year and BEP value was Rp. 13,56/pack, NPV value was Rp. 51,409,291, IRR value was 27.40%, the net value of B/C was 1,05 and the Payback Period was 2,8 years.Overall, the microwavable fish crackers business wassuitable to run.
