PENERAPAN HIGIENE SANITASI MAKANAN DAN UJI TOTAL COLIFORM PADA MAKANAN OLAHAN DAN AIR MINUM DI PONDOK PESANTREN ASSA’ADATUD DAROIEN KOTA PALEMBANG
Food and drink must be safe from contamination of pathogenic microorganisms so that hygiene sanitation in its processing and presentation becomes the main thing. Processing and serving large amounts of food, such as at the Islamic Boarding School Assa'adatud Daroien, requires more attention to avoid health problems such as diarrhea, hepatitis and food and drink poisoning. This study aims to determine the application of food management sanitation hygiene and total Coliform test on processed food and drinking water at the Assa'adatud Daroien Islamic Boarding School. The study was a qualitative descriptive study with interviews and observations, while the research sample was determined purposively with 6 informants consisting of 1 key informant and 5 supporting informants. The results showed that food hygiene sanitation in food processing, serving food and sanitation facilities did not meet the healthy criteria according to the Republic of Indonesia Minister of Health Regulation No.1096 of 2011 with a total value of Coliform in processed foods of >2400 MPN per 100mg and drinking water of 6.9 MPN per 100 ml or higher than the maximum limit is
