Penelitian ini bertujuan untuk mengetahui pengaruh penambahan konsentrasi dekstrin terhadap karakteristik minuman serbuk instan sari buah mengkudu (Morinda citrifolia L.). Penelitian ini menggunakan Rancangan Acak Lengkap Nonfaktorial dengan satu perlakuan yaitu konsentrasi dekstrin (7,5%, 10%, 12,5%, 15%, dan 17,5% b/v) dan masing-masing perlakuan diulang sebanyak 3 kali. Parameter yang diamati meliputi karakteristik fisik (indeks kelarutan air, rendemen), karakteristik kimia (kadar air, kadar vitamin C dan aktivitas antioksidan), serta uji organoleptik menggunakan uji hedonik terhadap aroma, rasa dan warna. Hasil penelitian menunjukkan bahwa perlakuan konsentrasi dekstrin berpengaruh nyata terhadap indeks kelarutan air, rendemen, kadar air, kadar vitamin C, aktivitas antioksidan dan uji hedonik. Perlakuan A4 (dekstrin 15%) merupakan perlakuan terbaik berdasarkan uji hedonik dengan karakteristik sebagai berikut: indeks kelarutan air 83,619%, rendemen 76,386%, kadar air 6,639%, kadar vitamin C 21,528 mg/100g dan aktivitas antioksidan 720,272 ppm, dan skor uji hedonik (aroma 1,96, rasa 2,04 dan warna 2,68).
