Penelitian ini bertujuan untuk mengetahui karakteristik bakso ikan patin akibat penambahan isolat protein kedelai, karagenan dan sodium tripolyphospat. Penelitian ini dilaksanakan pada bulan Mei sampai Juli 2016 di Laboratorium Pengolahan Hasil Perikanan Teknologi Hasil Perikanan dan Laboratorium Kimia Teknologi Hasil Pertanian, Universitas Sriwijaya Indralaya. Penelitian ini menggunakan rancangan acak kelompok (RAK) dengan lima perlakuan penambahan bahan tambahan pangan yang berbeda (karagenan 2%, STPP 0,3% dan ISP 7%). Setiap perlakuan diulangi sebanyak dua kali. Parameter yang diamati yaitu analisis fisik (expressible moisture content, kekuatan gel dan uji lipat), analisa kimia (kadar air, kadar protein dan kadar lemak) dan analisa sensori (aroma, rasa dan warna). Hasil penelitian ini menunujukkan hasil rerata nilai expressible moisture content (EMC) berada pada kisaran 0,52%-1,72%, kekuatan gel 79-172 gf, uji lipat 2-4, kadar air 70,14%-75,41%, kadar protein 3,98%-7,13%, kadar lemak 1,4%-2,16%.
