Penelitian ini bertujuan untuk mengetahui karakteristik fisik, kimia dan
sensoris mi kering dengan penambahan tepung ikan motan (Thynnichthys
thynnoides). Metode penelitian ini menggunakan Rancangan Acak Kelompok
(RAK) dengan menggunakan satu faktor yaitu penambahan konsentrasi tepung
ikan motan (0%, 5%, 10%, 15% dan 20%). Parameter yang diamati meliputi
analisis kimia (kadar air, abu, lemak, protein, karbohidrat, kalsium, dan fosfor),
analisis fisik (lighness, chroma dan hue, kekerasan, daya putus, elongasi, dan daya
serap air) dan analisis sensoris terdiri (warna, aroma, rasa, dan tekstur). Perlakuan
dalam penelitian berpengaruh nyata terhadap analisis kimia (kadar air, abu, lemak,
protein, kalsium dan fosfor), analisis fisik (lightness, chroma, hue, kekerasan,
daya putus, dan elongasi) dan analisis sensoris (warna, aroma, rasa, dan teksur).
Tetapi berpengaruh tidak nyata terhadap kadar karbohidrat dan daya serap air.
Perlakuan yang paling disukai yaitu M1 (konsentrasi tepung terigu 100% dan 5%
tepung ikan Motan). Kadar air, abu, protein, karbohidrat, kalsium, dan fosfor yang
dihasilkan yaitu 13,03%, 14,21%, 23,75%, 0,9%, 46,75%, 0,127%, 0,162%.
Lightness, chroma, hue, kekerasan, daya putus, elongasi dan daya serap air yaitu
58,43%, 14,13%, 71,13o, 1011,73gF, 15,93gF, 27,33%, 140,98%. Analisa sensoris
panelis terhadap warna, aroma, rasa, dan tekstur yaitu 3,8 (agak kuning cerah), 4
(tidak amis), 4,08 (gurih), dan 4,08 (kenyal).
