Tujuan penelitian ini adalah untuk mengetahui pengaruh penambahan
mocaf terhadap karakteristik fisik, kimia dan nilai indeks glikemik dari tortilla
kacang merah. Penelitian ini dilaksanakan di Laboratorium Kimia Hasil
Pertanian, Teknologi Hasil Pertanian, Fakultas Pertanian, Universitas Sriwijaya.
Penelitian ini dilaksanakan pada April 2015 hingga April 2016. Penelitian ini
menggunakan Rancangan Acak Lengkap Faktorial (RALF) dengan dua faktor
perlakuan. Faktor pertama yaitu bubur kacang merah (40, 70 and 100 %). Faktor
ke dua yaitu mocaf (30, 40 and 50 %). Parameter yang diukur pada tortilla adalah
tekstur, warna (Lightness, Chroma, Hue), kadar air, kadar abu, kadar protein,
kadar lemak dan uji organoleptik (warna, rasa dan tekstur). Hasil penelitian
menunjukkan bahwa bubur kacang merah berpengaruh nyata terhadap tekstur,
chroma dan kadar protein. Mocaf berpengaruh nyata terhadap kadar protein,
sedangkan interaksi antara bubur kacang merah dan mocaf berpengaruh nyata
terhadap kadar protein. Perlakuan terbaik berdasarkan uji hedonik adalah
perlakuan A2B2 (bubur kacang merah 70 % dan mocaf 40 %) dengan skor tekstur
3,12, rasa 3,24, dan warna 3,16. Tortilla tersebut memiliki tekstur 438,57gf,
lightness 55,30%, chroma 16,77%, and hue 61,33o, kadar air 8,59%, kadar abu
1,29%, kadar protein 14,83% dan kadar lemak 17,06%.
