PENENTUAN UMUR SIMPAN SIRUP NANAS (Ananas comosus (L.) Merr) DENGAN METODE ACCELERATED SHELF LIFE TEST (ASLT)
This study aims to determine the shelf life of pineapple syrup stored at different storage temperatures using the Accelerated Shelf Life Test (ASLT) method of the Arrhenius model which is carried out by accelerating the reaction process by increasing the storage temperature so as to accelerate the shelf life. Parameters observed during the storage process were viscosity, pH, total titratable acid, total soluble solids, vitamin C and Total Plate Count. Shelf life is obtained from the lowest activation energy value of the observed parameters, namely total titratable acid. The results showed that temperature and storage duration had an effect on pH, total titratable acid, total soluble solids and viscosity of pineapple syrup. The results based on the total titratable acid parameter showed that pineapple syrup stored at a storage temperature of 28°C is expected to have a shelf life of 39 days, a storage temperature of 38°C is expected to have a shelf life of 38,13 days and a storage temperature of 48°C is expected to have a shelf life of 37,66 days.
