DAYA TAHAN KOMPONEN BIOAKTIF EKSTRAK DAUN SIRSAK (ANNONA MURICATA LINN) DAN KITOSAN PADA PEMYIMPANAN IKAN ASIN
Soursop leaves (Annona muricata Linn) are plants that contain flavonoids, tannins, phenolics, and saponins that show the ability to inhibit bacterial growth in salted fish. The purpose of this study was to determine the effectiveness of chitosan as an inhibitor of bioactive compounds from soursop leaf extract disappearing or evaporating during storage of salted fish. This study was conducted experimentally in a laboratory with 5 levels of treatment and repetition times, namely F0: Salted fish made with 20% salt. F1: salted fish before entering the storage period. F2: Storage of salted fish for 10 days. F3: Storage of salted fish for 20 days. F4: Storage of salted fish for 30 days. Spraying with 20% soursop extract and 0.5% chitosan is the best treatment where the decrease in bioactive compounds is most stable compared to other treatments with a decrease in phenolics on days 10, 20, 30, namely 15%, 14%, 16%, a decrease in flavonoids 12%, 22%, 38%, a decrease in tannins 38%, 14%, 20%. The bioactive components that are most attached to salted fish are phenolic compounds of 30.08 mg GAE / g. decreased by 20% during 30 days of storage. The bioactive compound that experienced the greatest decrease was in the saponin compound with 0.5% chitosan treatment with a decrease of 37%. The treatment that experienced the most stable decrease was in flavonoid compounds with a decrease on day 10 of 0.86 mg QE/g (9%), on day 20 1.31 mg QE/g (15%) and 1.08 mg QE/g (15%). During 30 days of salted fish storage, bioactive components in salted fish were still detected and chitosan was known to help inhibit the loss of bioactive compounds.
