Diabetes is a chronic metabolic disorder characterized by high blood sugar levels, necessitating foods that can be consumed by individuals with diabetes to maintain stable blood sugar levels. This study substitutes mocaf flour and cherry fruit juice into a "lidah kucing" cookie as a snack for individuals with diabetes. The purpose of this research is to determine the formulation, nutritional content, and organoleptic tests of "lidah kucing" cookies made from mocaf flour with the addition of cherry fruit juice (Muntingia Calabura L) as a snack for individuals with diabetes mellitus.
