EFEKTIVITAS PHASE CHANGE MATERIAL (PCM) LEMAK IKAN TENGGIRI (Scomberomorus commerson) UNTUK MEMPERTAHANKAN KESEGARAN MUTU UDANG PADA PENANGANAN UDANG DI ATAS KAPAL SONDONG (SCOOP NET) DI PERAIRAN BANYUASIN, SUMATERA SELATAN
This study aims to evaluate the effectiveness of Phase Change Material (PCM) derived from mackerel (Scomberomorus commerson) fat in maintaining the freshness quality of shrimp caught by scoop net vessels in the Banyuasin waters, South Sumatra. Three cooling system treatments were tested: crushed ice (control), PCM, and a combination of PCM with crushed ice (mix), using a completely randomized design (CRD) with three 10-liter coolboxes. The PCM was packaged in aluminum sachets and mixed with 2.5% carbon black. The temperature of the shrimp, the cooling system inside the coolbox, and the ambient air outside were monitored in real time and automatically using a type K thermocouple sensor system. The results showed that the mix treatment maintained temperature stability better than the other treatments, with an average effectiveness value of -0.056°C/min. PCM showed enhanced thermal stability compared to the pure mackarel oil, with latent heat values of 15.57 J/g during melting and -29.92 J/g during freezing. Organoleptic tests indicated that the best shrimp quality was achieved in the mix treatment, exceeding the Indonesian National Standard (SNI). In a simple economic analysis, the mix treatment is also proven to be efficient and economical for long-term use. ANOVA and Tukey tests confirmed significant differences among treatments.
