Hendri Chandra, M.T. xxv + 62 pages, 10 table, 39 figures, 3 attachments SUMMARY One of the most widely consumed processed meat products in Indonesia is meatballs, which are served hot and have a high animal protein content, making them beneficial for health. In the production process, key ingredients such as beef, binders, fillers, and other additives are used to form the meatballs. The efficiency and quality of meatball production largely depend on the appropriate selection of equipment and tools. The use of a meatball forming machine is considered capable of improving operational effectiveness, accelerating production, reducing labor costs, and maintaining product consistency. This study aims to design and develop a portable meatball forming machine tailored for small and medium-sized enterprises (SMEs) in the food industry. The machine is designed to be compact, portable, energy-efficient, and capable of producing meatballs in large quantities with consistent shape and size. The research focuses specifically on the process of forming meatballs with diameters of 2 cm, 2.5 cm, and 3 cm, utilizing an efficient electrical power source. The testing results showed that for the 2 cm size, the average number of meatballs produced was 145 pieces with a production time of 120 seconds per kilogram; for the 2.5 cm size, 126 pieces were produced within 95 seconds per kilogram; and for the 3 cm size, 108 pieces were produced within 70 seconds per kilogram. These results indicate that the larger the meatball size, the fewer the number of meatballs produced, yet the production time per kilogram becomes shorter. Therefore, the selection of meatball size should align with production priorities, whether focusing on quantity or time efficiency. The use of this portable meatball forming machine is expected to enhance the production capacity of SMEs, meet the increasing market demand, and support the growth of the local food industry in Indonesia.
