This study aims to determine the characteristics of fresh oyster mushroom quality based on the type of variety (Florida oyster mushroom and HU oyster mushroom) and harvest age. This study was conducted in Payakabung Village, Ogan Ilir Regency, South Sumatra from May 2024 to July 2024. The method used in this study used a Completely Randomized Design (CRD) arranged factorially by studying 2 treatment factors, namely harvest age (A) 35 days, 40 days, 45 days and oyster mushroom varieties (B) Florida oyster mushrooms and HU oyster mushrooms. The research procedure starts from sample selection, measuring quality characteristics and data analysis. The results of this study showed that the highest values of water content, carbohydrate content, fat content and protein content of Florida oyster mushrooms were respectively in the A2B1 treatment and the lowest values of water content, fat content and protein content of Florida oyster mushrooms were respectively in the A3B1 treatment. The highest values of water content, carbohydrate content, fat content and protein content of HU oyster mushrooms were respectively found in treatment A2B2 and the lowest values of water content, carbohydrate content, fat content and protein content of HU oyster mushrooms were respectively found in treatment A3B2. The highest white degree values for Florida oyster mushrooms and HU were found in treatments A1B1 and A1B2, while the lowest white degree values were found in treatments A3B1 and A3B2. The highest texture values for Florida oyster mushrooms and HU were found in treatments A3B1 and A3B2, while the lowest texture values for Florida oyster mushrooms and HU were found in treatments A1B1 and A1B2.
