This study analyzes the added value of pakcoy chips produced by the Bina Tani Berkah MSME in Sungai Rebo Village, Banyuasin Regency. Pakcoy is a horticultural commodity with high economic value and is widely consumed in Indonesia. However, without further processing, pakcoy has limitations in shelf life and market value. Therefore, processing it into pakcoy chips is an effort to increase added value and extend product shelf life. This research employs a case study method with a quantitative approach using the Hayami method to calculate added value. The findings indicate that pakcoy chip production generates an added value of IDR 9,400 per pack, with an added value ratio of 0.04%, which falls into the low category. The main factors affecting added value include raw material costs, labor, and production expenses. Although the added value is low, this business still provides profit for the Bina Tani Berkah MSME and contributes to increasing the income of group members. In the future, marketing strategies and production efficiency need to be improved to ensure business growth and higher added value. Keyword: Pakcoy chips, added value. UMKM.
