ANALISIS KANDUNGAN GIZI DAN ASAM LEMAK KEPITING BAKAU (SCYLLA SPP.) DARI SILVOFISHERY KEPITING BAKAU DAN HABITAT ALAMI DI MARGA SUNGSANG, BANYUASIN, SUMATERA SELATAN
Marga Sungsang, Banyuasin, South Sumatra, has an extensive mangrove ecosystem, which is inhabited by Mud Crabs (Scylla spp.) In addition to their delicious taste, Mud Crabs are believed to possess good nutritional value and beneficial fatty acids for the body. However, it should be noted that fatty acids also have the potential to increase cholesterol levels. This study aims to analyze the nutritional composition and fatty acid profile of Mud Crabs (Scylla spp.) from natural habitats and Silvofishery systems, as well as to examine their environmental influences. Samples were collected using a purposive sampling method, followed by preparation and fat extraction. Proximate analysis was conducted to determine the nutritional content, while fatty acid analysis was performed using the GC-MS method. Nutritional content data were analyzed statistically using the MANCOVA method, while the distribution of fatty acids and the relationship between environmental parameters and the nutritional and fatty acid content of Mud Crabs (Scylla spp.) were visualized using PCA. The results showed that Mud Crabs from Silvofishery systems had higher protein and fat contents, as well as higher level of unsaturated fatty acids, than those from natural habitats. This study provides additional information regarding the potential of Mud Crabs from Silvofishery systems as a high protein and low fat food source with better MUFA and PUFA content.
