ANALISIS PERILAKU PEDAGANG PECEL LELE DAN KADAR BILANGAN PEROKSIDA PADA MINYAK GORENG BERULANG DI SEKITAR KAMPUS UNSRI INDRALAYA
The repeated use of frying oil by pecel lele street food vendors poses potential health risks due to the formation of harmful compounds, including elevated peroxide values and free radicals. This study aims to examine the behavior of pecel lele vendors and assess the peroxide levels in reused frying oil around the UNSRI Indralaya campus. A qualitative research design was employed, involving 20 purposively selected informants: seven vendors, twelve consumers, and one chemist. Data were collected through in-depth interviews guided by structured interview protocols, direct observation using checklists, documentation, and peroxide value testing conducted by the BSPJI Palembang Laboratory using the iodometric titration method. Data validity was ensured through source, method, and data triangulation. Findings revealed that although most vendors and consumers were aware of the risks of reusing frying oil, none were familiar with the specific peroxide value thresholds. Vendors commonly reused oil throughout the day without proper replacement. While most used packaged oil and separated new from used oil containers, proper storage practices such as airtight sealing were generally not followed. The use of deep-fat frying for moisture-rich ingredients like catfish further accelerated hydrolysis and oxidation processes, increasing peroxide values. In conclusion, the behavior of continuously reusing frying oil without adequate replacement, improper storage, and prolonged frying of high-moisture foods contributes to peroxide levels exceeding safe limits. It is recommended that vendors filter the oil, store it properly, and replace it before it becomes visibly degraded.
