Pineapple, banana, and potato peels contain bioactive compounds such as flavonoids and phenolics, which have the potential to act as antioxidants and protective agents against ultraviolet (UV) radiation. This study aims to optimize a sunscreen cream formulation using flavonoid and phenolic compounds extracted from the eco-enzyme fermentation process of these waste materials, with the addition of carrageenan as a thickening agent. Eco-enzyme was obtained through anaerobic fermentation for three months. The formulation included variations in fermented product concentrations of 20% and 40% and carrageenan concentrations of 0.5% and 1%. Cream formulation optimization was carried out using a 2² faktorial design to determine the optimal concentrations of the fermented product and carrageenan. The evaluation included tests for viscosity, spreadability, adesiveness, pH, wash-off resistance, and the in vitro sun protection factor (SPF) value using UV-Vis spectrophotometry, as well as physical stability tests using the cycling test method for six cycles at temperatures of 4°C and 40°C. Variations in the concentrations of the fermented product and carrageenan significantly affected the physical characteristics of the cream. Increasing carrageenan concentration enhanced viscosity and adesiveness, while the concentration of the fermented product contributed to an increase in SPF value. The optimum formulation, consisting of 40% fermented product and 0.5% carrageenan, exhibited the following characteristics: pH 5.40 ± 0.071, viscosity 5571.88 ± 545.930 cPs, adesion time 13.360 ± 0.209 seconds, washability 16.267 ± 0.881 mL, and spreadability under a 200 g load of 6.250 ± 0.122 cm. The optimum formulation demonstrated an SPF value of 12.053 ± 0.491, classified as maximum protection sunscreen with a desirability value of 0.950. The cycling test results indicated good physical stability of the formulation without significant changes in pH, organoleptic properties, and homogeneity. The combination of fermented products from pineapple, banana, and potato peels with carrageenan produces an effective, stable sunscreen cream with potential as an environmentally friendly natural sunscreen alternative.
