PENGARUH KONSENTRASI EKSTRAK APEL TERHADAP SIFAT FISIKOKIMIA DAN ORGANOLEPTIK TEH CTC MUTU PF EKSTRAK APEL (Malus domestica)
This research aims to determine the effect of apple extract on the physicochemical and organoleptic properties of CTC tea PF quality apple extract (Malus domestica). This study used a Non Factorial Completely Randomized Design with one treatment (apple extract concentration) with 6 treatment levels (0%, 5%, 10%, 15%, 20%, 25%) and each treatment was repeated 3 times. The parameters observed included physical characteristics (color), chemical characteristics (pH, total phenols, antioxidant activity) and organoleptic tests (color, taste and aroma). The results showed that the concentration of extracts had a significant effect on color, pH, total phenols, antioxidant activity and organoleptic (color, taste and aroma). PF quality CTC tea with 15% concentration was the best treatment with color values (L* 33.37, a* 27.41 and b* 40.91), pH 4.38, total phenols 393.68 mgGAE/g and antioxidant activity 29.38 ppm.
