PERENCANAAN DAN PERANCANGAN AKADEMI KULINER DENGAN PENDEKATAN URBAN FARMING DI PALEMBANG
Food and beverages are basic human needs that must be fulfilled every day, which drives the growth of various professions in the culinary field, one of which is the chef. Today, culinary publications are easily found in various media, both electronic and print, such as magazines, books, and cooking television programs like MasterChef. This phenomenon has greatly influenced public interest in culinary professions, especially the role of the chef. This profession, derived from the French term chef de cuisine, refers to someone who leads and is responsible for the kitchen, requiring the skills and knowledge needed to manage a team in food preparation. In South Sumatra, many vocational schools offer culinary arts programs; however, higher education in this field is only available at the Politeknik Pariwisata Palembang, with a DIII program that has become increasingly popular, as reflected by a 20% increase in culinary students. Additionally, plants play an important role in providing ingredients for food, which are now cultivated through the concept of urban farming in urban areas. Urban farming utilizes limited land, such as home yards and building rooftops, to grow vegetables, fruits, and herbs, which can reduce the carbon footprint and strengthen local food security. In this context, the planned development of a Culinary Academy in Palembang, integrating urban farming, aims to create an innovative and environmentally friendly culinary learning center, utilizing urban farming produce as ingredients for cooking activities. This academy is expected to provide a greener learning space and support the development of a sustainable culinary sector in Palembang.
