PENGARUH PENAMBAHAN KELAPA MUDA PARUT TERHADAP SAMBAL LINGKUNG KALDU TULANG IKAN GABUS (CHANNA STRIATA)
This study aims to determine the effect of the addition of grated young coconut on the sambal lingkung bone broth of cork fish (Channa Striata). This research was conducted at the Laboratory of Agricultural Products Chemistry, Processing and Sensory of Agricultural Products, Department of Agricultural Technology, Faculty of Agriculture, Sriwijaya University. This research was conducted from May 2022 to October 2023. This research used a non-factorial Completely Randomized Design (CRD) method with 5 treatments and each treatment was repeated 3 times. The parameters observed in this study include physical characteristics (color includes L*, a*, b*), chemical characteristics (moisture content, ash content, fat content and protein content) and organoleptic tests (aroma, taste, texture and appearance). The data obtained were statistically analyzed using analysis of variance (ANOVA). The results showed that the treatment factor of grated young coconut concentration had no significant effect on the value of lightness (L*), redness (a*), flavor and aroma, while the yellowness (b*), moisture content, ash content, appearance and texture showed that it had a significant effect with the treatment of grated young coconut concentration. For the test of fat content and protein content, the best treatment was carried out with the results of fat content of 64.88%% and the results of protein content obtained were 25.41%.
