Organic waste is the remaining materials of human activities that are easily decomposed such as fruit and vegetable peels which cause environmental pollution and health problems, for this reason, organic waste management is carried out into a fermentation solution product of organic waste skin with brown sugar and water. Organic waste fermentation solution contains acetic acid and alcohol as well as secondary metabolite compounds as antifungal compounds. F. Oxysporum is a pathogen that causes wilting in plants. The results of previous research show that organic waste fermentation solution has antifungal effectiveness against F. Oxysporum. This study aims to determine the chemical characteristics of organic waste fermentation solutions including pH, alcohol, and acetic acid, secondary metabolite compounds as antifungal against F. Oxysporum from fermented solution of organic waste of barangan banana skin, honey pineapple skin and shallots. The research was conducted from March to August 2024. The research location was at the Microbiology Laboratory and Genetics and Biotechnology Laboratory, Department of Biology, Faculty of Mathematics and Natural Science, Sriwijaya University. This study examines the chemical characteristics of organic waste fermentation solution of barangan banana peel, honey pineapple peel and shallots as antifungal against F. Oxysporum. The results showed that the fermentation solution of organic waste had a pH of 3.4; alcohol content of 7.45% and acetic acid of 2.87% and positive secondary metabolite compounds contained alkaloid, flavonoid, saponin, and tannin compounds. The effectiveness of inhibation of F. Oxysporum growth with the percentage of inhibation reached 90.76% at the highest concentration of 45%. Bioautography test showed the presence of inhibation zones on the spots of phenolic and flavonoid compound groups.
