UPAYA PENERAPAN PERILAKU HIGIENE DAN SANITASI PENJAMAH MAKANAN DI KANTIN SMPN 1 INDRALAYA UTARA KABUPATEN OGAN ILIR
Snacks at school became a worrying problem because school-age children did not yet understand the safety of the food they consumed, so it was necessary to implement cleanliness, hygiene and sanitation practices to ensure the safety of those snacks. The purpose of this study is to analyze the behavior of the implementation of hygiene and sanitation on food sales in the Canteen of SMPN 1 Indralaya Utara, Ogan Ilir district. This research is a type of qualitative research. The informants in this study amounted to 15 people, including 6 main informants and 9 key informants who were selected by purposive sampling. The method were data collection uses in-depth interview guidelines, observation using the checklist form and photovoice. The method used to obtain data wetness uses source triangulation, method triangulation and data triangulation. Based on in-depth interviews and observations, the results of the study showed that the knowledge, attitudes, and actions of food handlers regarding hygiene and sanitation practices were generally good, especially in storage, equipment used, and food served. However, deficiencies existed in the personal hygiene of food handlers, and food processing remained lacking regarding hygiene and sanitation practices in food at the SMPN 1 Indralaya Utara canteen. Suggestions in this study are expected for food handlers at the SMPN 1 Indralaya Utara Canteen to always implement hygiene and sanitation practices to ensure personal hygiene until food presentation, and for the school to improve supervision and provision of facilities that are able to guarantee food safety in the school canteen.
