BERNICA TOYBA, Antihipercolesterolemia Activity Of Nipah (Nypa fruticans) Fiber Extract With Different Extraction Temperature (Supervised by SABRI SUDIRMAN). Hypercholesterolemia is a condition of increased LDL-cholesterol and triglyceride levels and decreased HDL-cholesterol levels, which is generally treated with drugs such as simvastatin. The purpose of this study was to determine the effect of extraction temperature on extract yield, total phenol, flavonoid, and tannin contents, and antihypercholesterolemic activity of nipah fruit fiber extract. The research was conducted experimentally with three extraction temperatures, namely 30°C, 45°C, and 60°C, and repeated three times. The results showed that increasing the extraction temperature increased the extract yield, total phenols, total tannins, and total flavonoids. The highest extract yield was obtained at 60°C (12.39%). The total phenol content also increased from 35.35 mg GAE/g (30°C) to 43.94 mg GAE/g (60°C). The same thing happened to the tannin and flavonoid contents, which reached 19.02 mg TAE/g and 2.48 mg QE/g, respectively, at the highest temperature. Thus, the results of this study indicate that higher extraction temperatures can increase the content of bioactive compounds in nipah fruit fibers, which have potential as anti hypercholesterolemia agents. Hiperkolesterolemia merupakan kondisi peningkatan kadar LDL-kolesterol dan trigliserida serta penurunan kadar HDL-kolesterol, yang umumnya diatasi dengan obat seperti simvastatin. Tujuan penelitian ini adalah untuk menentukan pengaruh suhu ekstraksi terhadap rendemen ekstrak, kandungan total fenol, flavonoid, dan tannin, serta aktivitas antihiperkolesterolemia dari ekstrak serabut buah nipah. Penelitian dilakukan secara eksperimental dengan tiga suhu ekstraksi, yaitu 30°C, 45°C, dan 60°C, serta dilakukan pengulangan sebanyak tiga kali. Hasil penelitian menunjukkan bahwa peningkatan suhu ekstraksi meningkatkan rendemen ekstrak, total fenol, total tanin, dan total flavonoid. Rendemen ekstrak tertinggi diperoleh pada suhu 60°C (12,39%). Kandungan total fenol juga meningkat dari 35,35 mg GAE/g (30°C) menjadi 43,94 mg GAE/g (60°C). Hal serupa terjadi pada kandungan tanin dan flavonoid, yang masing-masing mencapai 19,02 mg TAE/g dan 2,48 mg QE/g pada suhu tertinggi. Dengan demikian, hasil penelitian ini menunjukkan bahwa suhu ekstraksi yang lebih tinggi dapat meningkatkan kandungan senyawa bioaktif pada serabut buah nipah, yang berpotensi sebagai agen antihiperkolesterolemia.
