PENGARUH PENAMBAHAN CMC DAN BUNGA ROSELLA (Hibiscus sabdariffa) TERHADAP KARAKTERISTIK FRUIT LEATHER BUAH NAGA MERAH (Hylocereus polyrhizus)
This research aims to determine the effect of adding CMC and rosella flowers and the characteristics of red dragon fruit leather. This research used a Completely Randomized Factorial Design with two treatment factors and three treatments for each tray. The first factor is the addition of CMC with a concentration of 0,5%, 1,2% and the second factor is the addition of rosella flowers with a concentration of 20%, 30%, 40%. The parameters observed were physical characteristics (texture), chemical characteristics (water content, total sugar content, pH, total acid, vitamin C) and organoleptic tests (color, taste and texture). The results showed that the addition of CMC had a significant effect on texture, water content, pH and total acid. The addition of rosella flowers had a significant effect on texture, water content, pH, total acid and vitamin C. The interaction between the two concentrations had a significant effect on water content and pH. Treatment A2B1 (CMC 1,2%, rosella flowers 20%) was the best treatment based on texture characteristics 34,09 (gf), water content (16,63%), total sugar content 27,87%, pH (3,64 ), total acid (1,13%), vitamin C (56,91 mg/100 g) and organoleptic tests of color (score 3.37), taste (score 3,10) and texture (score 3,20).
