UJI EFEKTIVITAS EKSTRAK DAUN ECENG GONDOK (Eichhornia crassipes) SEBAGAI PENGAWET ALAMI DAN PENGENDALI PERTUMBUHAN MIKROBA PADA TELUR ITIK
The method of preserving duck eggs by soaking water hyacinth leaf extract at a concentration of 40% with different soaking times has the potential to maintain the quality of duck eggs. This research aims to test the effectiveness of water hyacinth leaf extract in extending shelf life and inhibiting microbial growth in duck eggs. This research was carried out from September to October 2023 at the Animal Nutrition and Food Laboratory, Animal Husbandry Study Program, Department of Animal Technology and Industry, Faculty of Agriculture, Sriwijaya University. This study used a completely randomized design (CRD) with 5 treatments and 4 replications. Treatments consisted of P0 (Without water hyacinth leaf extract solution), P1 (15 minutes soaking duck eggs in 40% water hyacinth leaf extract), P2 (30 minutes soaking duck eggs in 40% water hyacinth leaf extract), P3 (60 minutes soaking duck eggs in 40% water hyacinth leaf extract), P4 (90 minute soaking of duck eggs in 40% water hyacinth leaf extract). The data were analyzed using variance and if there was a significant effect, it was continued with Duncan's multiple distance test, while the TPC test used the descriptive method. The variables observed were pH, egg yolk index, color index, and total microbes. The results of the study showed that treatment with pH, egg yolk index, color index, and Total Plate Count had no significant effect (P>0.05). Treatment with soaking in 40% water hyacinth leaf extract showed poor results in slowing down the decline in duck egg quality. The average values resulting from this research are pH 8.250-9.000, egg yolk index 0.216-0.339, color index 8.375-10.592, and Total Plate Count (TPC) 5.8433x104-1.814667x106 (CFU/gr). This research can conclude that preserving eggs with 40% water hyacinth leaf extract with different soaking times has not shown a real effect in maintaining egg quality by inhibiting microbial growth in duck eggs.
