IDENTIFIKASI MUTU TAHU DARI BEBERAPA PASAR TRADISIONAL DI KOTA PALEMBANG
This study aimed to identify the effect of different types of coagulants, namely calcium sulfate and acetic acid on the physical and chemical characteristics of tofu. This research was conducted in December 2023 at the Agricultural Product Chemistry Laboratory, Agricultural Product Technology Study Program, Department of Agricultural Technology, Faculty of Agriculture, Sriwijaya University. This study used a non-factorial Completely Randomized Design (CRD) method with 1 treatment factor, namely tofu with different agglomerants (calcium sulfate and acetic acid) and each treatment was repeated 3 times. Parameters observed in this study included physical characteristics (texture and color L* C* h*) and chemical characteristics (pH, protein content, and formalin test). The results showed that the use of different coagulants on tofu had a significant effect on physical characteristics (L* and h* color), chemical characteristics (pH and protein content) and had no significant effect on physical characteristics (texture and C* color). In the formalin test there were 2 samples that were positive for formalin with sample code B, tofu with the use of calcium sulfate or acetic acid.
