Food sanitation hygiene is an important aspect of food processing to ensure the safety and hygiene of food from production to consumption. The behavior of food handlers plays an important role in each of these stages because food handlers can be agents of disease spread. This study aims to analyze the relationship between with food sanitation hygiene in Jakabaring Sport City Palembang. This study used quantitative research with cross sectional design. The sample size was 70 traders with purposive sampling technique. Data analysis using bivariate analysis with chi square test and multivariate analysis with multiple logistic regression test. The results showed that there was a relationship between action (p-value = 0.001) and sanitation hygiene facilities (p-value = 0.001) with food sanitation hygiene. While knowledge (p-value = 0.967), attitudes (p-value = 0.648), education level (p-value = 1.000), and monthly income (p-value = 0.000) are not associated with food sanitation hygiene. The variable presence of food sanitation hygiene facilities is the most dominant factor in the implementation of food sanitation hygiene with a p-value = 0,000, PR=80,758, CI= 12,538 – 520,141 after being controlled by action variables and monthly income. It is recommended for traders to provide a place to wash hands with soap.
