PENGARUH PROSES PEMURNIAN TERHADAP KADAR AIR DAN ASAM LEMAK BEBAS DALAM PEMBUATAN MINYAK GORENG DARI CRUDE COCONUT OIL
Crude coconut oil was produced from copra extraction. Purifying crude coconut oil was important to eliminate unwanted taste and aroma. The purification process included degumming, neutralization, bleaching, and deodorization. Before purification, crude coconut oil had characteristics that did not meet the SNI 9804:2020 standard. The purification process reduced the water content and FFA of crude coconut oil. The final result of the purification process with the addition of 0.5% phosphoric acid in the degumming process obtained a water content of 0.02% and FFA content of 0.12%, the addition of 1% phosphoric acid in the degumming process obtained a water content of 0.06% and FFA content of 0.14%, and the addition of 1.5% phosphoric acid in the degumming process obtained a water content of 0.08% and FFA content of 0.14%. The final result in the degumming process showed that the optimum phosphoric acid concentration was 0.5%. Fatty acid analysis results using Gas Chromatography (GC) showed that the lauric acid content in the oil after purification increased from 44.18% to 48.75%, meeting the SNI 9804:2020 standard, which required a minimum lauric acid content of 43%. Organoleptic test results conducted by 30 panelists indicated that the aroma and color of purified coconut oil were similar to those available in the market.
