PENENTUAN INDEKS PREBIOTIK TEPUNG MAGGOT BSF TERHADAP BIFIDOBACTERIUM BIFIDUM DALAM MENGHAMBAT ESCHERICHIA COLI SECARA IN VITRO
BSF maggot flour has the highest protein content as well as other ingredients such as carbohydrates, fatty acids, minerals, antimicrobial peptide (AMP), and chitin. BSF maggot flour protein can be utilized by Bifidobacterium bifidum (B. bifidum) to stimulate its growth. The purpose of this study was to determine the potential of BSF maggot flour as a prebiotik by testing its effect, index, and prebiotic activity in inhibiting the growth of Escherichia coli (E. coli). The total plate count method was used to test the effect, index, and prebiotic activity in inhibiting the growth of E. coli. The results of organoleptic characterization test, foreign body, degree of fineness, and moisture content have met the requirements of SNI 01-3751-2018, but the ash content test has not met the requirements of SNI 01-3751-2018 with the result of 16%. The prebiotic effect value obtained was 0,2549 CFU/mL with significant differences between groups. The prebiotic index value obtained was 1.0196 CFU/mLg, indicating that BSF maggot flour is effective in stimulating B. bifidum bacteria. The prebiotic activity value obtained was a positive value of 0.8687, indicating that B. bifidum bacteria grew better on media with BSF maggot flour than on media with ammonium chloride. The results of the effect test, index, and prebiotic activity in inhibiting E. coli growth prove that BSF maggot flour has potential as a prebiotic and can be developed into functional food ingredients.
