PENENTUAN INDEKS PREBIOTIK TEPUNG MAGGOT BSF TERHADAP Lactobacillus plantarum DALAM MENGHAMBAT Escherichia coli SECARA IN VIITRO
BSF (Black Soldier Fly) maggot flour has a high protein content that can act as a natural prebiotic. Lactic Acid Bacteria (LAB) of the genus Lactobacillus such as Lactobacillus plantarum (L. plantarum) produce bacteriocins that can inhibit the growth of pathogenic bacteria such as Escherichia coli (E. coli). This study aims to see the effect and prebiotic index of BSF maggot flour in inhibiting E. coli. The prebiotic effect, prebiotic index, and prebiotic activity were carried out by looking at the growth of L. plantarum and E. coli bacteria and then calculated using the Total Plate Count (TPC) method. The characterization test of BSF maggot flour was carried out with organoleptic, fineness, and foreign body tests in accordance with SNI 01-3751-2018 standards. The prebiotic effect value of BSF maggot flour was 0,3761. The prebiotic index value obtained was 1.5044. The prebiotic activity value of BSF maggot flour was 0,9 which shows that TMB can be metabolized by L. plantarum but can not be metabolized by E. coli.
