The research is aimed to analyze the of production factors on output value and look at the conditions of economic scale and profit levels in the canned fruit and vegetable processing industry in Indonesia. The data used is secondary data sourced from the Indonesian Central Statistics Agency for 1990-2020. The analysis technique used is the multiple linear regression test. The research results show that the production factors of raw materials, labor, and capital simultaneously have a significant effect on the output value. Partially, raw materials and labor have a significant positive effect on the output value, while capital has a significant negative effect on the output value. The economic scale test in the canned fruit and vegetable processing industry in Indonesia is in the Decreasing Return to Scale condition, and it has an average profit level of 57.39 percent or worth 16.4 billion rupiah.
