ANALISIS PENERAPAN PRINSIP HIGIENE SANITASI MAKANAN DI INSTALASI GIZI RUMAH SAKIT UMUM DAERAH OGAN ILIR TAHUN 2023.
Based on the report of food poisoning cases in 2019, hospitals in Indonesia there were 16 cases, and the report of the Palembang POM Center in 2019 food poisoning incidents with 158 victims in South Sumatra. Most test results come from people who do not maintain hygiene and sanitation of the food processing process. The purpose of this study is to analyze the application of food hygiene and sanitation principles in the Nutrition Installation of RSUD Ogan Ilir. The research method used was qualitative research by conducting in-depth interviews with 8 people and observation. The results obtained in the study include food ingredients sourced from official places, food ingredients such as meat, fish, fruit, and vegetables are in good condition, and packaged food ingredients have met regulatory standards, food storage is safe, which is distinguished between wet food ingredients and dry food ingredients, food handlers before cooking food ingredients are cleaned first, and the cooking process is carried out thoroughly so that none of the food is still raw, regarding the food processing place is good enough, transportation of food using special stroller vehicles and vehicles are always cleaned every day, food when transported in a closed state, as well as in food presentation each type of food is placed in a separate and closed container, Food is served hot, the equipment used is clean, and the presentation of food is exactly as it should be. The conclusion in the study is that it has not met the requirements of the Indonesian Minister of Health Number 1096 of 2011 concerning sanitary hygiene of jasaboga. It is recommended that the Nutrition Installation of Ogan Ilir Hospital needs to improve at the stages of food processing and food transportation.
