AKTIVITAS ANTIOKSIDAN DENGAN METODE DPPH PADA KEPITING BAKAU (Scylla serrata) DARI PERAIRAN SUNGSANG
Mud crabs are an important component of fisheries in coastal areas. Crab ranks third after shrimp and lobster because of the delicacy of seafood and also the fishery value it supports. The world's crab fisheries are thriving and there is a wide scope for crab meat not only for the delicacy of the meat but also for its nutritional richness. Antioxidants are included in certain substances that can slow down, delay, or prevent damage to a cell tissue. This study aims to see the presence of antioxidant activity in mud crabs (Scylla serrata).Mud Crab (Scylla serrata) was selected for this study for a number of reasons, including that this type of crab is consumed more often than other crab varieties. Because the meat is delicious and the nutritional value is quite good in the form of protein. Mud crab samples were taken directly using folding traps in Breech waters. Analysis of antioxidant activity was carried out at the Marine Oceanography Laboratory, Faculty of Mathematics and Natural Sciences, Sriwijaya University. The results showed that mud crab extract (Scylla serrata)has a fairly high antioxidant activity of 2.25 ppm.
