Food was a basic human need that provides various nutrients that humans needed. Regarding food safety, efforts must be made to produce safe products, namely by implementing the Guidelines for Good Manufacturing Practice (GMP) based on Regulation of the Head of BPOM RI No. HK.03.1.23.04.12.2206 of 2012 for the Home Industry. The objectives of this research were (1) Analyzing the level of suitability of cassava chips home industries that have obtained P-IRT and have not obtained P-IRT in implementing Good Manufacturing Practice (GMP) based on Regulation of the Head of BPOM RI No. HK.03.1.23.04.12.2206 of 2012, (2) Calculate the production income received by cassava chips home industries that have obtained P-IRT and have not yet obtained P-IRT. This research was conducted at Keripik Cek Ella home industry and Keripik Pitoyo home industry located in Palembang City in September 2023. The research method used was the survey method and purposive sampling method. The data used was primary data and secondary data. The results of this research were (1) The cassava chips home industry that already has a P-IRT made fewer discrepancies or deviations compared to the cassava chips home industry that does not yet have a P-IRT based on CPPB guidelines. Cassava chips home industry that already have P-IRT have deviations from field conditions of 34% with 9 nonconformities consisting of 3 major nonconformities, 5 serious nonconformities and 1 critical nonconformity. Meanwhile, cassava chips home industry which do not yet have P-IRT made deviations based on the results of the scoring gap analysis of 61% with 21 nonconformities consisting of 5 major nonconformities, 9 serious nonconformities and 7 critical nonconformities. (2) The income received by cassava chips home industry that obtain P-IRT is much greater than that of cassava chips home industry. Keywords: cassava chips, GMP, income.
