Cooking oil is one of the basic human needs which is used every day to process foods. Cooking oil is able to conduct heat, provide a savory taste, crunchy texture, brown color and increase the nutritional value of food. Bulk cooking oil is cooking oil that is only filtered once. Bulk cooking oil may be originated from packaged cooking oil that is rejected due to leaks on the packaging. The purpose of this research were:(1) to estimate the amount of cooking oil used by fried food traders in Pagar Alam City; (2) to analyze the factors that influence cooking oil consumption by fried food traders in Pagar Alam City;(3) to describe the use and the handling of cooking oil waste by fried food traders in Pagar Alam City. This research was conducted in Pagar Alam City. The location was selected purposively. Data collection was carried out in January 2023. The method used in this study was a survey method. The results showed that the average use of bulk cooking oil by fried traders in Pagar Alam City was 12.73 Kg per day. Factors that significatly influenced the use of bulk cooking oil were the price of bulk cooking oil, income and capital. The R-square value was 0.898 and the F-test was significant statistically which indicated that the independent variables altogether influenced the use of bulk cooking oil by food traders in Pagar Alam. The average use per cooking was 9.15 kg per day and the average frequency use was 3.45 time. After temporarily collected, then the cooking oil waste was then disposed of to sewers.
