PENGARUH KONDISI DAN LAMA PENYIMPANAN AIR KELAPA (COCOS NUCIFERA L) TERHADAP PRODUKSI NATA DE COCO
This research aims to determine the effect of coconut (Cocos nucifera L.) water storage condition and period towards nata de coco production. This research was conducted from August 2022 to completion at the Agricultural Products Chemical Laboratory, Department of Agricultural Technology, Faculty of Agriculture, Sriwijaya University. This study used a Completely Randomized Factorial Design (RALF) with two treatment factors and each treatment was repeated three times. Factor A was storage conditions (covered with plastic and covered with fabric). Than factor B was storage period (0 days, 3 days, 6 days, 9 days, 12 days, and 15 days). The data obtained was analysed using analysis of variance (ANOVA). Treatments that had a significant effect were tested further using the 5% Honest Significant Difference (BNJ) test. The results showed that treatment A (storage conditions) had a significant effect on total acid and total sugar of coconut water as well as the thickness and yield of nata de coco, while treatment B (storage time) had a significant effect on total acid, total sugar, and pH of coconut water, and thickness and yield of nata de coco. The interaction between the treatment conditions and the length of storage of coconut water had a significant effect on the total sugar and had no significant effect on the total acid and pH of the coconut water, as well as the thickness and yield of nata de coco. Storage of coconut water as a raw material for making nata de coco can still be carried out up to the 12th day of storage.
