This research aims to utilize the liquid waste from taro beneng starch processing as a substrate for nata fermentation. This research used a Completely Randomized Factorial Design with 2 treatment factors, which are the proportion of taro beneng starch waste and coconut water and also fermentation time. Parameters observed consisted of yield, thickness, moisture content, hardness, and color (lightness, chroma, hue). The results showed that the liquid waste from taro beneng starch processing contained sugar content 2.1%, ash content 0.3% and protein content 3.9%. The liquid waste from the processing of taro beneng starch can be used as a nata substrate by adding coconut water. The proportion of coconut water 50% and liquid waste from taro beneng starch processing 50% with fermentation time of 9 days is the best treatment with a yield value 92.04%, water content 95.13%, thickness 2.03cm, hardness 515.07gf, lightness 54 .64%, chroma 9.16%, and hue 192.91º.
