PENERAPAN METODE AKSELERASI DENGAN MODEL ARRHENIUS TERHADAP PENDUGAAN UMUR SIMPAN ABON IKAN PATIN (Pangasius pangasius)
This study aims to determine the shelf life of shredded catfish (Pangasius pangasius) through the accelerated method with the Arrhenius model. This study used a laboratory experimental method, estimating the shelf life of shredded catfish (Pangasius pangasius) through the Arrhenius equation at storage temperatures (25 ℃, 40 ℃ and 55 ℃), observed every 5 days for 20 days and carried out three replications. The initial parameters observed were moisture content, ash content, fat content, protein content, and carbohydrate content. The results of the proximate analysis of shredded catfish obtained were 5.77 % ash content, 12.66 % moisture content, 48.68 % protein content, 28.20 % fat content, and 4.70 % carbohydrate content. Parameters for changes in the quality of shredded catfish observed for 20 days were free fatty acids (FFA) and water activity (aw). The FFA value of shredded catfish at 25 ºC, 40 ºC, and 55 ºC were in the range of 0.11-0.36 %, 0.11-0.47 %, and 0.11-0.58 % respectively. While the aw values at temperatures of 25 ºC, 40 ºC, and 55 ºC are at intervals of 0.4750-0.4967, 0.4750-0.5100, and 0.4750-0.5167 resvectively. In this study, the parameters used as critical parameters for estimating the shelf life of shredded catfish were free fatty acids. The shelf life of shredded catfish obtained from this study was 420 days at 25 °C, 300 days at 40 °C, and 221 days at 55 °C.
