OPTIMALISASI PROSES PEMBUATAN TEMPE LOTUS (Nelumbo Nucifera) TERHADAP KARAKTERISTIK FITOKIMIA
This study aimed to determine the optimal process and characteristics of phytochemical components of tempe lotus. This study uses 2 stages of Research Design, namely, the first stage Optimization of the process of making fermented lotus (tempe lotus seeds) using Response Surface Methodology (RSM) Box Behnken design version 19 using minitab version 19 based on the highest tannin content. The results of measurements using treatment for optimal tannin content are yeast 1.00 g, soaking time 16 hours, fermentation time 42 hours. The lowest tannin content obtained was 14.89% and the highest was 21.81%. The second stage of parameter testing from the optimal data of the first stage was analyzed descriptively and conducted an independent sample t-test. Testing parameters include polyphenol content, flavonoid content, and crude fiber content. The results showed Polyphenol content in tempe lotus 35.78 mg GAE/g sample, flavonoid content in tempe lotus 20.07 mg GAE/g sample, crude fiber content in tempe lotus 1.80%.
