This study aimed to determine the effect of different concentrations of sugar and agar on the physicochemical and sensory characteristics of sweet fragrant mango sheet jam. This research was conducted from December 2022 to May 2023 at the Chemical, Processing, and Sensory Laboratory of Agricultural Products, Agricultural Product Technology Study Program, Department of Agricultural Technology, Faculty of Agriculture, Sriwijaya University. This study used a Factorial Completely Randomized Design (CRD) with two treatment factors, namely different concentrations of sugar and agar. Each treatment was repeated three times. Parameters observed included texture, color (Lightness (L*), Redness (a*) dan Yellowness (b*)), moisture content, total soluble solids, pH, and preference test of texture, color, and taste. The results showed that the different concentrations of sugar and agar had a significant effect on lightness, redness, yellowness, moisture content, total soluble solids, and sensory characteristic. Treatment A2B2 (sugar 30% and agar 5%) was the best treatment based on sensory characteristics (hedonic test) namely texture (score 3.42), taste (score 3.48), and color (score 3.42), physical characteristics of texture 95.77 gf, lightness 59.26%, redness 10.04% and yellowness 34.82%, as well as chemical characteristic of moisture content 15.79% and total soluble solid 75.49%Brix.
