ANALISIS RANTAI PASOK DAGING SAPI PADA PASAR TRADISIONAL DI KOTA PALEMBANG
The objectives of this study are: (1) To analyze product flow, financial flow and information flow in the beef supply chain in traditional markets in Palembang City; (2) To analyze the level of efficiency of beef marketing in traditional markets in Palembang City. This research was conducted in November at a traditional market in Palembang City. The research method used was a survey with a sample of 32 people. Data is processed using qualitative and quantitative methods. The results of this study show that: (1) there are 3 streams in the beef supply chain in Palembang City, namely product flow, financial flow and information flow that runs optimally. Product flows move from upstream to downstream, financial flows move from downstream to upstream, and information flows move from upstream to downstream and downstream to upstream; (2) there are 2 types of beef supply chains in traditional markets in Palembang City, the first flow starts from Suppliers, Distributors, Retailer 1, Retailer 2 and consumers, while the second flow starts from Suppliers, Distributors, Retailer 1, and consumers; (3) beef supply chain channels in the traditional market in Palembang City are efficient with efficiencies of 1.3 persen and 1.2 persen; (4) Retailer 1 is the chain that benefits the most in the beef supply chain at traditional markets in Palembang City; (5) Consumers who buy directly to Retailer 1 get a cheaper price Keywords: beef, efficiency, supply chain
