ANALISIS HARGA POKOK DAN NILAI TAMBAH PENGOLAHAN DAGING SAPI MENJADI BAKSO DI KELURAHAN GANDUS KOTA PALEMBANG
The objectives of this study are (1) to study the production process and marketing system for meatballs in Gandus Village, Palembang City,(2) calculating the basic price of meatballs in Gandus Village, Palembang City, and (3) calculating the profit or added value after the beef is processed into meatballs. This research was conducted in Gandus Village, Palembang City. Data collection was carried out in December 2022-January 2023. The method used is a survey method which collects information from a sample by asking through a questionnaire or other aids that contain questions related to research. The sampling method used in this study is the sample census method where all sampling units in the population are sampled. The data collected in this study are primary data and secondary data. The results of this study indicate that on average raw materials are obtained from the Jakabaring market. The process of processing beef into meatballs goes through several production stages, including milling, making meatball bulbs, cooling, and packaging. Meatballs in Gandus Village can be purchased directly at the location where the meatballs are made or you can also place an order in advance if you buy in large quantities. There are two ways to deliver the meatballs in Gandus Village, namely directly delivering the meatballs to the customer's place or waiting for the customer to come directly to the meatball production site. Delivery costs are borne by the meatball business actors if the delivery location is still around Gandus. If the delivery location is outside Gandus, there will usually be an additional fee of around Rp20,000.00. In a month the processing of meatballs is carried out 8 times of production, in one production it requires 10 kg of beef. The basic price obtained in research on meatball processing in Gandus Village, Palembang City is Rp129,729. The added value ratio obtained in the processing of beef into meatballs is 20.671% so that based on the criteria for determining the value added ratio, the processing of meatballs produces moderate added value, namely between 15% -40%.
